Jim Painter is a speaker and educator on food psychology. He holds a PhD in food science and human nutrition from the University of Illinois. He is an adjunct professor at the University of Texas and a professor emeritus at Eastern Illinois University, where he chaired the School of Family and Consumer Sciences until 2013. As a registered dietitian since 1980, he has served as a nutrition adviser for large organizations and as director of nutrition research for the California Raisin Marketing Board. Jim has more than 100 peer-reviewed publications and presentations.
